This recipe is simply delicious, and all the ingredients mesh well to create a fantastic meal.
Ingredients
1/2 teaspoon cumin
1/2 teaspoon cinnamon
1/2 teaspoon curry
1/4 teaspoon turmeric
1 Tablespoon of chopped fresh basil leaves
1/2 teaspoon salt
A pinch of black pepper
1 cup of onion diced
2 Large garlic cloves (grated)
1 – 2 cups of sweet potatoes (diced into tiny pieces)
1/2 cup of chickpeas (cooked)
1/4 cup of green lentils
1 – 2 cups of vegetable stock
1 – 2 cups of water
1 tablespoon of freshly grated ginger
1/2 cup of couscous (cooked)
Method
In a large pot, combine all the spices (cumin, cinnamon, salt, curry, turmeric, black pepper) and 1/2 a cup of water, and cook for about 1 – 2 minutes, stirring occasionally. Then add the onion, garlic, and sweet potatoes), and let cook for about 7 minutes. Don’t forget to stir occasionally. Then add the remaining ingredients (chickpeas, ginger, vegetable stock, lentils, basil leaves), and cook on low-medium heat for about 20-25 minutes. You may wish to increase the liquid level at any time by adding an extra half cup of vegetable stock or water. Then it is ready to serve with a side of couscous.
