I got inspired to bake Christmas treats, because ‘tis the season to be jolly / fa la la la la / and ‘tis season is just around the corner. Plus the treats below are lactose-free and certainly delicious.  Enjoy!

S’more Peppermint & Candy cane brownies

2 cups All-purpose flour

1 – 3/4 cup of Cocoa powder

2 cups sugar

1 Teaspoon baking powder

1 Teaspoon salt

1/2 teaspoon of cinnamon

1 cup Almond milk (soy milk, coconut milk…)

1 cup Vegetable oil

1 Tablespoon vanilla extract

1/4 – 1/2 teaspoon of pure peppermint extract

Candy canes

1/2 – 1 cup of mini-Marshmallows


 Preheat oven to 350 degrees, and grease brownie pan. In a large bowl, mix in flour, cocoa powder, sugar, baking powder, salt and cinnamon (basically all the dry ingredients).  In another bowl, mix in milk, vegetable oil, vanilla extract, and peppermint extract (in other words, the wet ingredients). Then combine both mixtures (wet and dry) together in the larger bowl, and mix until well blended. Finally, pour the combined mixture in the greased brownie pan, crush a few candy canes into the brownie mixture, and bake in the oven for 25-30 minutes. Once the brownie is baked, remove it from the oven, and spread marshmallows on its surface, and continue baking for another 5-7 minutes. Finally, crush and sprinkle a few candy canes on the s’more brownie surface and let it cool. You can also get fancy with the decoration of the s’more brownies by pouring chocolate syrup on its surface.

Peppermint Candy cane & Cranberry Cookies

2 – 2.5 cups of flour

1 egg yolk

3/4 cup Sugar

1 cup Vegetable oil

1/2 teaspoon of baking powder

A pinch of salt

Cold water (as needed)

1 Teaspoon vanilla extract

Candy canes

1/4 – 1/2 teaspoon of pure peppermint extract

1/4 cup of Cranberries


Preheat oven to 350 or 375 degrees, and grease cookie pan/tray. Then, in a large bowl, mix in oil and sugar and beat until well blended. Add the egg yolk, vanilla extract and peppermint extract, and continue to beat mixture until light and fluffy. Then, mix in the flour, baking powder, cranberries and salt to the mixture. Finally, if you notice that the dough breaks easily, add a few Tablespoons of cold water, to hold everything together, so that it can be rolled out. So at this time, roll the dough and cut desired cookie shapes and sizes, and place them on the baking sheet/cookie tray. Place the cookie tray in the oven for 10-20 minutes depending on preferred taste, and texture. Finally, let the cookies cool for about 5-15 minutes. It should be noted that the candy canes may be used for decoration or they can be baked together with the cookie dough.
