This recipe is both vegan and lactose-free. Very quick and very easy oatmeal recipe for one person or more.
– 1/2 cup oats
– 1 cup almond milk (sweetened or unsweetened)
– 1/8 teaspoon of cinnamon
– Fruits (raspberries, strawberries and blueberries)
– * 1 Tablespoon of 100% Maple Syrup
Depends on how you like your oatmeal, I generally prefer a creamy and non-crunchy oatmeal, so simply mix the oats and almond milk in a saucepan and bring the mixture to a boil, and let simmer until fully cooked. The heating time should be approximately 10-15mins. Add the cinnamon for taste, towards the 5 minute or 10 minute mark, and let the mixture simmer on low heat. Do not forget to stir occasionally in order to avoid burning the oatmeal. Once the oatmeal is ready to serve, add the fruits to improve taste and appearance.
Note: To improve taste further, add 1 Tablespoon of maple syrup at the time you add the cinnamon.
Serving: 1-2 persons
