This is an easy lentil recipe for both vegans and vegetarians, very healthy, completely tasty and nutritious.

Ingredients

1/2 – 1/4 cup onions

1 carrot (diced)

1.5 teaspoon ginger (diced/minced)

1 clove of garlic (diced/minced)

1 teaspoon curry powder

1 cup vegetable broth

1/2 tablespoon tomato paste

1/4 cup green lentils

2 tablespoons olive oil

Parsley and Cilantro to improve appearance

Preparation

On medium heat, caramelize the onions, and then add the carrots, ginger, garlic, and curry powder and sauté the mixture for 1 – 2minutes. Add the vegetable broth, and tomato paste at the same time, stirring until the tomato paste is completely combined with the broth. Simmer the mixture for a few minutes, then add the lentils and stir. Bring the heat down to low-medium, and cook the lentil medley for about 20 minutes. Let the medley cool for a few minutes before serving.

Serving: 1 – 2 persons
